Fermentation occurs spontaneously by natural by wild yeasts.\u003cbr\u003eBefore the end of fermentation, the grapes are pressed by a vertical hand-operated press.\u003cbr\u003eHalf of the wine goes into stainless steel vats, the other half into 500-litre wooden barrels.
