Jonathan's last name is hardly adequate because this \"Pabiot\" is probably the most organic of Pouilly sur Loire producers!\nJonathan took over the vines from his grandfather in 2005. Former motocross champion, Jonathan directly decided to radically change the style of the wines to produce a true Pouilly-Fumé of the terroir. From the start, he therefore worked organically with numerous biodynamic treatments (500, 501, herbal teas, etc.) in order to restore life to the soil. He also realized that for Sauvignon, yields were the key to the expression of the terroir. There is no point in forcing them. The vine must produce what it is able to bear naturally like grapes, without being forced.\nMost of its vintages therefore come from small yields, which explains the higher price of these wines. In reality, with a yield of barely 22 hectoliters per hectare (against 55 for its neighbors) for its Aubaine cuvée, with the same number of bottles produced, Jonathan is in fact significantly less expensive. This is an essential qualitative element but of course it has a cost.
